In this video I share with you a new to me recipe, that turned out to be a family hit, and will fast become a family favorite. This time of year what is better than pumpkin spice anything, and you can’t lose with a pumpkin spice cake! Better still, this cake is dairy free, low fat, and Trim Healthy Mama-ish. I think it is THM-E, but it could be a cross over. In any case, it is made with wholesome, healthy ingredients, is high fiber, low fat, low sugar, and whole grain. Give it a try, I know you won’t be disappointed!
Recipe:
Ingredients:
2 1/2 C. whole wheat flour or sprouted grain flour
1/2 C. Stevia blend + 2/3 C. coconut sugar ~OR~ 1 2/3 C. coconut sugar
1 1/2 tsp baking soda
1 tsp salt
1/4 tsp baking powder
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
2 eggs
1 can pumpkin puree
1 tsp vanilla
1/4 C coconut oil – melted.
Mix all dry ingredients. Add wet ingredients. Blend well. Pour batter in greased 9×13 pan. Bake in preheated 350 degree oven 35-45 minutes or until tests done. Cool completely. Frost with your favorite cream cheese frosting.
