~Camping Weekend~ What I Ate, THM, Birthday Celebration!

In this video I take you with us on our first camping trip of 2021! We had a great time with friends, lots of really good food, and lots of relaxation. I share with you everything I ate during our trip. Do you think I stayed on the THM plan or did I totally blow it? You’ll have to watch and see! New Intro, Pups & Storytime ~What is THM?~

What I Ate For An Entire Week on Trim Healthy Mama

I have never done a video like this before but I thought it sounded like a fun video to do and it also kept me on track eating the Trim Healthy Mama plan. In this video I share with you absolutely everything I ate for an entire week, every breakfast, lunch, supper and snack. I tried my best to say true to the THM plan and I think I did really well. I stayed full and satisfied and by the end of the week I do feel like I’ve lost some weight, my pants are looser at any rate (but I won’t get on that hateful scale!) There were a few ups and downs during the week and we had some unexpected challenges, but I’m proud that I stuck to the plan. I hope you find this video helpful and entertaining.

Let’s Bake! ~Pumpkin Spice Cake~ Dairy Free, Low Fat, THM-Eish

In this video I share with you a new to me recipe, that turned out to be a family hit, and will fast become a family favorite. This time of year what is better than pumpkin spice anything, and you can’t lose with a pumpkin spice cake! Better still, this cake is dairy free, low fat, and Trim Healthy Mama-ish. I think it is THM-E, but it could be a cross over. In any case, it is made with wholesome, healthy ingredients, is high fiber, low fat, low sugar, and whole grain. Give it a try, I know you won’t be disappointed!

Recipe:

 Ingredients:

2 1/2 C. whole wheat flour or sprouted grain flour

1/2 C. Stevia blend + 2/3 C. coconut sugar ~OR~ 1 2/3 C. coconut sugar

1 1/2 tsp baking soda

1 tsp salt

1/4 tsp baking powder

1 tsp cinnamon

1/2 tsp cloves

1/2 tsp nutmeg

2 eggs

1 can pumpkin puree

1 tsp vanilla

1/4 C coconut oil – melted.

Mix all dry ingredients. Add wet ingredients. Blend well. Pour batter in greased 9×13 pan. Bake in preheated 350 degree oven 35-45 minutes or until tests done. Cool completely. Frost with your favorite cream cheese frosting.

Food Prep

In this video I spend the afternoon doing a bunch of food prep to make life easier for the week. It also helps me to stay on track with my healthy eating plan. It’s nice to have a bunch of fruit and veggies cleaned and prepped in the refrigerator for quick and easy snacks and side dishes. I wash and process a bunch of different veggies and fruit and the last thing I did was bake some low fat Trim Healthy Mama approved cookies.

Peanut Butter Oat Cookies

  • 1 Cup Rolled Oats
  • 1 Cup defatted peanut butter powder (flour)
  • 1/2 Cup Oat fiber
  • 1/2 Cup Stevia Baking Blend
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 2/3 Cup egg whites (carton or fresh)
  • 1/2 Cup unsweetened applesauce
  • 1 TB molasses
  • splash vanilla
  • 2-3 TB water
  • 1 Cup super dark chocolate chips

Combine all ingredients. Preheat oven 400 degrees. Bake 10 minutes or until firm yet moist on the inside
